Overall the eVGA GeForce 6800 GT has a lot going for it. It has a very competitive price that makes it attractive over other GeForce 6800 GT cards, the performance is quite good even for a single board in modern computers and the Step-Up Program allows users to upgrade in case something better comes out shortly after they have purchased the card.
SLI is something of a mixed blessing however. While it does boost performance, it seemed to be more limited by the computer processor than the graphics processors. This combined with the 6800 GT already being fast enough for most games at high resolutions with both anti-aliasing and anisotropic enabled. It does allow for future performance upgrades if the identical graphics card can be found down the road.
Another problem with SLI is that is doesn't always boost performance. This could be because the game does not have a profile from NVIDIA or the game engine just does not technically match well with the feature. At least NVIDIA has enabled the ability in later driver versions to create custom profiles for currently unprofiled games.
There are people who are looking to get the same level of performance as a 6800 GT board by using an SLI configuration of two 6600 GT boards. To these people I would recommend getting a single 6800 GT board instead. The cost are roughly the same but at least the 6800 GT has the bonus of higher performance for those games that currently do not support SLI.
